Balsamic Sweet Potatoes
2 medium sweet potatoes
1 Tbsp balsamic vinegar
1 Tbsp parsley
Place potatoes in a saucepan and cover with water. Cook 30-40 minutes or until tender. Remove potatoes and peel. Cut into slices ½ inch thin and arrange in serving dish. Sprinkle with balsamic vinegar, pepper and parsley.
Serves 4. 1 starch, ½ condiment.
